Hugh Allen pursued a career as a chef from a young age, starting at Rockpool at just 16. A stint at Vue de Monde followed, where he was awarded the 2016 Gault Millau Young Chef of the Year Award, taking him to several Michelin-starred restaurants in Paris. He spent 3 years at René Redzepi's five-time "World's Best Restaurant" winning Noma in Copenhagen before returning to Melbourne as Executive Chef of Vue de Monde. At just 26 years old, he became the youngest chef ever to be awarded three hats in the 2021 Good Food Guide and in 2023 he was named Gourmet Traveller's Chef of the Year. His diverse culinary experiences in both modern and classic kitchens have shaped his unique cooking style, which is both refined and inventive in its use of local and native ingredients.
