How to Cook Fresh Mushrooms. Perfect as a side dish or toast topper, these mushrooms are as versatile as they are flavourful.

Fresh mushrooms of your choice

3 garlic cloves

Fresh thyme

Olive oil

Method - Pan frying

Clean the mushrooms with a pastry brush and trim the ends. Slice into 1 cm pieces.

Heat a cast iron pan over high heat. Add the mushrooms in batches to avoid overcrowding, drizzle with a small amount of water and cook until it evaporates.

Repeat the water and cook-down process, two more times until the mushrooms are deeply browned and fully cooked. Add a drizzle of olive oil and the butter and cook until the flavours have infused. Season with a pinch of salt and pepper.
Method - Roasting

Use a pastry brush to gently clean your mushrooms. Trim the mushroom stems as needed.

Place whole mushrooms on a lined baking tray along with whole garlic cloves and sprigs of fresh thyme. Drizzle with olive oil and season with a pinch of salt and pepper.

Wrap the mushrooms in the baking paper to create a sealed parcel, then cover with foil. Roast for 20-25 minutes or until the mushrooms are tender and infused with flavour.

Use your finished mushrooms on toast, tossed through pasta, or stirred into risotto.

Avoid rinsing your mushrooms with water.

If you are not using your fresh mushrooms straight away, cover them in paper towel and store them in an air tight container
