How to Cook Sushi Rice. Whether you're preparing a sushi platter or a nourishing rice bowl, this recipe ensures well-balanced flavour and ideal texture every time.

    Ingredients

      2½ cups water

      ¼ cup rice vinegar

      2 tbsp caster sugar

      1 tbsp furikake

    Method

      In a large pot, combine the sushi rice, salt, and water. Bring to the boil, then cover and simmer for 12 minutes.

      Once cooked, fluff the rice gently with a fork. Cover again and set aside to steam for a further 5 minutes.

      In a small bowl, mix the rice vinegar and caster sugar until the sugar is completely dissolved.

      Remove the pot from the cooktop. Stir the vinegar mixture evenly through the rice, then spread the rice onto a tray to cool.
