Ingredients

Top Apple Layer

3-4 apples red and green
Lemon juice
50 g unsalted butter
1/4 cup brown sugar
1/2 tsp cinnamon

Cake Batter

120 g unsalted butter
1/2 cup brown sugar
2 eggs
1 1/2 cups self raising flour
1/2 tsp baking powder
1/3 cup milk
1 shot cognac (optional)
1 green apple (chopped)

Icing sugar to dust

Method

Top Apple Layer

Preheat oven to 170°C fan-forced (190°C conventional).
Slice the apples and add a squeeze of lemon juice.
Melt butter, sugar, and cinnamon and pour over the apples.
Set aside.

Cake Batter

Using an electric beater or stand mixer, cream butter and sugar until light in colour. Add an egg and continue beating after both additions.
Fold through the flour, baking powder and cinnamon slightly then pour in the milk and cognac continuing to fold until you have a thick cake batter.
Fold through the pieces of apple and transfer to a lined 9-inch round and lined spring form tray.
Arrange all apple slices on top and pour the leftover butter and sugar mixture all over the apples.
Bake (with the cake tin sitting by within a larger tray in case of any leak) for approximately one hour,
Dust with icing sugar and enjoy.
