A delicious and crispy filo pastry parcel traditionally filled with a local Cretan goats cheese called, Galomyzithra and sprinkled with sugar.

Ingredients

200 g ricotta
100 g Greek Feta cheese
100 g Greek Manouri cheese
9 sheets of Fillo pastry (3 per bougatsa parcel)
150 g melted unsalted butter
100 g unsalted butter (cold and cubed)
3 tsp white sugar

Method

Combine the cheeses in a bowl and mix to combine well.
Set aside.
Butter three sheets of filo pastry with melted unsalted butter laying each sheet vertically on top of the other.
Scoop two heaped tablespoons of the cheese mixture onto the filo and spread it just under halfway down the pastry in a rectangle shape.
Fold the bottom of the pastry sheet up over the cheese, bring in the sides to seal, brush with butter, and fold up the remaining filo to create the parcel.
Using 100 g of cold cubed butter per parcel, in a pan over medium heat (not medium-high, just medium), melt 2 cubes of butter and place the Bougatsa parcel on top.
Add another cube of butter and move it around the parcel to cook the sides.
Check underneath the parcel to see if it is turning golden then flip and add another two cubes of butter to continue cooking.
Remove from heat, and cut into small squares followed by sprinkling 1 teaspoon of white sugar to each parcel (honey if you prefer).
