Nduja Roast Chicken with Cherry Purée, Fennel & Watercress
Method
- 1Remove the wishbone and wingtips from the chicken. Pat the chicken dry, place it on a rack and refrigerate uncovered for 12–24 hours to air-dry the skin.

- 3To make the glaze, combine the honey, cumin, coriander, sweet paprika, salt and pepper in a saucepan.
- 4Warm over medium heat for 1 minute or until fragrant. Remove from the heat and stir through the sherry vinegar.
- 5Brush the chicken all over with a light coating of glaze and reserve the remainder.
- 6Preheat the combination steam oven on Fan Plus at 200°C.
- 7Place the chicken in the gourmet oven dish and position it on the FlexiClip runners.

- 9For Stage 2, select Combi Fan Plus at 150°C with 60% moisture and cook for 40 minutes.
