The kitchen is run by chefs Tom Campbell and Ethan Eadie, and their ethos is to celebrate seasonality, authenticity and sustainability throughout their menu. The dishes change regularly depending on what's available from their organic kitchen garden as well as sourcing meat from small local farmers.
