High Protein Bowl

Method

  1. 1
Cut the block of tofu into small cubes.
  2. 2
Heat the oil in a frypan over medium high heat.
  3. 3
Place the sliced tofu into the pan and cook for 4 minutes, stirring regularly.
  4. 4
Add the tamari, nutritional yeast, sesame, and pumpkin seeds to the cooking tofu. Stir to incorporate everything and cook for an additional minute, then turn off the heat and set aside.
  5. 5
Drain and rinse the beans. Add them to a bowl along with the ground coriander and the juice of 1/2 lime.
  6. 6
Cut the cherry tomatoes in half and add them to the beans. Mix well.
  7. 7
Distribute the pre-cooked quinoa evenly between bowls. Divide the bean mixture between bowls and slice the radishes into thin circles and distribute them between both bowls.
  8. 8
Slice the avocado half onto a chopping board, then slice into strips and divide between the bowls.
  9. 9
Top each bowl with the prepared tofu.
  10. 10
Garnish with fresh herbs like parsley or coriander.
...And that's it, enjoy!
