Poached Scallops with Crab Butter, Roasted Fish Sauce & Finger Lime
Method
- 1Preheat the oven on Fan Plus at 200°C with the Crisp Function activated.
- 2Arrange the fish frames in a single layer on a universal tray or perforated gourmet baking tray.
- 3Roast for 25–30 minutes or until deeply golden brown and well dried on the surface. Remove from the oven and set aside.
- 4Transfer the roasted fish frames to a saucepan and add the chicken or fish stock.
- 5Place the saucepan on the induction cooktop, select Level 9 and bring the stock to a simmer.
- 6Reduce the induction cooktop to Level 6–7 and cook gently for approximately 45 minutes, reducing the liquid to around 100 ml.
- 7Strain the reduction through a fine sieve into a clean saucepan. Reserve 100 ml for the crab butter sauce.
- 8To make the crab butter sauce, place a saucepan on the induction cooktop and select Level 7.
- 9Add 20 g cultured butter and allow it to melt, then reduce the induction cooktop to Level 6.
- 10Add the fennel, shallot and garlic. Cook for approximately 7 minutes or until softened and fragrant without colouring.
