Lamb Ghormeh Sabzi
Persian cooks are famous for their stews (collectively known as ghormeh), as well as their profuse use of herbs. Both traditions feature prominently in this slow-cooked, exotically fragrant casserole that is one of my mom’s greatest hits. It’s so iconic that Iranian expats initiated an International Ghormeh Sabzi Day, celebrated two days after Thanksgiving.
