Roasted Cauliflower, Lentil, Currant and Herb Salad

The salad combines different elements that I believe make up an outstanding salad. Greens, grains, roasted vegetables, dried fruit, fresh herbs, crunchy nuts, creamy cheese and then a killer dressing to bring it all together. The roasted cauliflower provides a delicious nutty and crunchy element, but you can substitute this with any roasted veggies you like.
