Savoury Porridge with Caramelised Onion, Shiitake, Fried Duck Egg, Chili & Crispy Parmesan

Cooking the oats in the style of creamy risotto and adding some seriously delicious ingredients give it the ultimate umami flavour. I like mine with a duck egg because of the creamier consistency they tend to have due to the larger yolk. You can use chicken eggs as an alternative. Either way, it is still delicious.
