Ultimate One-Bowl Chocolate Cake

Method

For the Cake

  1. 1
    Preheat oven to 175°C fan-forced (195°C conventional). Grease and line base and side of a 20cm cake pan with baking paper. 
  2. 2
    Combine sugar, flour, cocoa powder, baking soda and baking powder in a large bowl. Whisk to remove any lumps. Make a well in the centre. Add eggs, oil, vanilla and water. Whisk until smooth. Transfer to prepared cake pan. Smooth over top.

    Bake for about 30-35 minutes, or until cake is cooked when tested. Remove. Stand 15 minutes before transferring to a wire rack.

    To make icing, combine all ingredients in a bowl. Add 2-3 tsps of hot wate and stir until smooth, adding extra water if necessay.

    Spread icing over top and side of cake to serve.

  • Cake Mix

    • 1 cups Caster Sugar

    • 1 cups Plain Flour (sifted)

    • 1/4 cups Cocoa Powder

    • 3/4 tsp Bicarbonate of Soda

    • 3/4 tsp Baking Powder

    • Pinch sea salt flakes

    • 2 Eggs (lightly whisked)

    • 1 tbsp Grapeseed Oil (or melted coconut oil)

    • 1 tsp Vanilla essence

    • 1 cups just-boiled water

  • Icing

    • 1/4 cups Icing Sugar Mixture

    • 1/4 cups Cocoa Powder

    • 50 g Butter (at room temperature)
