Cardamom Shortbread
Method
- 1Beat the butter, sugar, cardamom and salt in a stand mixer fitted with the paddle attachment for about 4 minutes, or until pale and creamy. Add cream and beat until just combined.
- 2Remove from mixer and fold in the flour by hand until combined. Turn out onto a lightly floured bench and bring together into a dough. Flatten into a disc, wrap and refrigerate for 1 hour, or until firm.
- 3Preheat oven to 180°C fan-forced (200°C conventional) and line two flat baking trays with baking paper.
- 4Roll out dough, on a lightly floured surface, until 1cm thick. Use a 6cm round cutter to cut out 20 shapes, re-rolling dough as necessary. Place rounds on prepared trays with a little space between each.
- 5Bake for about 15 minutes, or until lightly golden and firm to touch. Remove from oven. Cool on trays.
- 6Dust with icing sugar.
