Homemade Aioli

Method

To make the Aioli

  1. 1
    Place the egg yolks, garlic, Dijon mustard, and white wine vinegar into a jug.
  2. 2
    Using a hand blender. Blend for 15–20 seconds until smooth.
  3. 3
    With the motor running, slowly drizzle in the oil in a steady stream to emulsify the mixture. If it becomes too thick, add a teaspoon of warm water to loosen as needed.

    Once all the oil is incorporated and the aioli is thick and creamy, season with salt and lemon juice to taste.

    Transfer to a container and set aside until ready to serve.

    • 1/2 clove garlic

    • 1 tbsp Dijon mustard

    • 1 tsp white wine vinegar

    • 250 ml vegetable oil

    • Salt, to taste

    • 1 tbsp lemon juice (or to taste)

    • Warm water (optional, to adjust consistency)
